Cacao Granola - "Just like a chocolate milkshake, only heeeee-althy!"


This granola is pretty much my new favourite thing. It's crunchy and chocolatey

and so freaking delicious.

Eat it like cereal, in a bowl with almond or coconut milk.

Eat it as a crumble on top of something else.

Eat it by the handful standing in the kitchen when no-one is looking... What?!

 

Ingredients

Makes one large jar

4 cups of any combination of: Activated buckwheat groats Puffed buckwheat/quinoa Shredded or desiccated coconut Chopped or flaked nuts

3/4 cup cacao powder 1/2 cup ground flaxseed 1/4 teaspoon rock salt

6 tablespoons of coconut oil 1/4 cup rice malt syrup

Method

Pre-heat oven to 150 C

Mix dry ingredients in a bowl

Melt rice malt syrup and coconut oil together

Add to dry ingredients and mix well

Spread evenly over lined baking tray

Bake for 45 minutes, checking and stirring regularly

If it seems like it needs a bit more oil, spray lightly with olive or coconut oil.

It will crisp up as it cools so don't over cook it.
