Roasted Corn with Truffle Butter - Sweet, earthy deliciousness.
There's nothing quite like the wonderfully sweet taste of roasted corn, with the
touch of char to really bump it up a notch.
Adding my amazing Black Garlic and Truffle Butter to the cooked corn
makes this a luxurious side dish, or main.

Ingredients
Serves 4-6
Black Garlic and Truffle Butter
125 grams of good quality butter
20 grams grated truffle
6 cloves of black garlic
Roasted Corn
Truffle and Black Garlic Butter
4-6 Corn cobs
Olive oil
Method
Black Garlic and Truffle Butter
Bring the butter to room temperature until softened.
Place in the bowl of a stand mixer and add half of the black garlic.
Beat until light and fluffy.
Add the truffles and the rest of the black garlic and mix gently until combined.
Roll into logs using cling wrap or store in a glass jar.
Keep refrigerated until use.
Roasted Corn
Peel back the husks of the corn and remove the silk.
Tie the husk at the base of the cob with string that has been soaked in water.
Generously oil the corn and place on a hot barbeque.
Cook for approx. 15 minutes, turning regularly until corn is cooked and blackened.
Place cooked corn cobs on a serving platter and dress with pats of truffle butter to serve.
