Caramelised Onion and Goat's Cheese Tarts - All the good things, wrapped in a grain-free shell


So, you guys know that I’m happily married, right?

But let me tell you, if I could marry a food item, my husband would be out on the street and this beautiful little round of deliciousness would be my one true love.

I’m not going to lie, it’s a little bit fiddly, but only a little bit I promise.

The creaminess of the filling, against the sweet of the onion and the tang of the goat’s cheese is just perfection.

Try it, tell me that you wouldn’t spend the rest of your life with it.

Ingredients

Serves 4

Crust

100 grams of almond flour

100 grams of parmesan cheese, finely grated

2 egg whites

Salt

Filling

2 small red onions

2 Tablespoons of olive oil

1 Tablespoon of balsamic vinegar

2 Tablespoons of Swerve

2 eggs, plus two yolks

170 grams of cream

Salt and pepper

A pinch of nutmeg

200 grams of goat’s cheese

½ teaspoon of fresh thyme, with extra for garnish
