Keto Collagen Chai - Sweet, rich comfort in a cup
I'm sure that I don't need to tell you about my deep and abiding passion for coffee.
It's a real and genuine love.
But when my auto immune disease flares up, coffee is not my friend.
When my digestive system is raw and inflamed, the last thing I should be drinking is coffee.
During a flare up, I've always reached for a sugar-free hot chocolate or caved in and drank chai with sugar added, which just ends up making me feel ill.
I need sweet, creamy and gently but beautifully spiced at these times to bring me
comfort from within.
Ta da! Enter this divine sugar-free chai mix, made with collagen for added gut health.
The collagen creates a lovely froth but if you would like it ever frothier, feel free to switch it out for good quality grass-fed gelatin. Just make sure that you blend it straight away and very well.
I make mine with cream and water but you could use whichever plant based milk appeals to you, or if you are non-keto you could just go with dairy.

Ingredients
Serves 30
1/2 cup of organic grass-fed collagen powder
1/2 cup of vanilla protein powder
1/2 cup of sweetener (I used Sukrin Gold)
2 teaspoons of powdered ginger
2 teaspoons of all spice
2 teaspoons of cardamom
2 teaspoons of nutmeg
4 teaspoons of cinnamon
Method
Place 1 heaped tablespoon of the mix into a blender jug.
Add a splash of boiling water and stir to dissolve.
Add either boiling water and a tablespoon of cream, or heated milk of choice to
make up one cup.
Blitz in the blender for 15-30 seconds until frothy and combined.
Pour into a mug and relax while sipping.
