Low Carb Bliss Balls - Bite sized goodness for that mid-afternoon slump
I do love me a yummy bliss ball, but let's be honest, they're often so full of sugar (yes, even natural sugar) that I might as well be eating a chocolate bar.
These balls are made without nuts or dates so they are perfect for those of you with nut allergies, or for those of us on a low carb way of eating.
I used Davidson Plum powder, but you could use freeze-dried raspberry powder instead if you wanted to.

Ingredients
Makes 15
1 cup unsweetened shredded coconut
1 Tablespoon of sweetener of choice
1 Tablespoon of Davidson Plum powder
4 Tablespoons of vanilla or un-flavoured protein powder
6 Tablespoons of virgin coconut oil
1/4 teaspoon pure vanilla extract
Method
Place all ingredients into a food processor and blitz until it is well combined.
If the mixture seems a bit dry, add another Tablespoon of coconut oil.
Roll into teaspoon sized balls and refrigerate until ready to eat.
You can roll them in additional Davidson Plum powder, but it's not necessary.
