Mushroom and Ricotta Stuffed Chicken - A trio of delicious flavours and textures...

With delicately flavoured mushrooms and rich cheesy filling, these stuffed chicken breasts that I created for Diet Doctor are sure to impress.

Ingredients

serves 4

CARBS 3.1 g | PROTEIN 64.9 g | FAT 28.3 g | CAL 540

4 chicken breasts, skin off, approx. 250 grams each

4 tablespoons of olive oil, 60 grams

Salt and pepper

70 grams of sliced white mushrooms, approx. 1 cup

1 tablespoon of fresh thyme leaves, 3.2 grams

1 tablespoon of coconut aminos, 18 grams

200 grams of ricotta

25 grams of finely grated parmesan cheese, approx. 5 tablespoons

1 teaspoon of onion powder, 2.5 grams

1 teaspoon of ground black pepper, 2.5 grams

4 sprigs of fresh thyme
