Salted Chocolate Olive Oil Mousse - I'm having a private moment...


You guys know how I feel about chocolate by now, surely?

I mean, it’s practically the perfect food group. That’s my story and I’m 

sticking to it.

Using olive oil instead of cream in this mousse makes it rich and silky

 and so decadent.

You’ll be surprised at how such a simple change can create a completely 

different dessert.

Perfect for a dinner party, or any Wednesday.

You can have these made and on the table in just over half an hour and they make wonderful lunchbox fillers too.

Ingredients

serves 4

4 eggs, separated

150 grams dark chocolate (minimum 85%)

80 grams olive oil (mild flavoured, not extra virgin)

½ teaspoon of sea salt

4 Tablespoons of Swerve

½ teaspoon of vanilla powder
